Mark Greenaway received nationwide acclaim following the opening of his eponymous restaurant in Edinburgh in February 2011, followed by Bistro Moderne in Stockbridge in 2013.  Awarded 3 AA Rosettes for outstanding cuisine in 2012, Mark has previously represented Scotland on BBC2’s Great British Menu and Great British Menu Does Comic Relief.

When I hear the words ‘This Is Edinburgh’, the first thing that springs to mind is (and this is an easy one) the Castle. It’s a view I never tire of.  I also love the city centre all lit up in the winter, it just looks magical, like something out of a fairy tale.

Edinburgh never quietens down. As a business owner, I have first-hand experience that it's a busy city all year round. A fantastic thing about the city is that there is always something going on and there are always things to do.

What ingredient/dish epitomises Edinburgh?  
An ingredient/dish that epitomises the city is the 99 ice cream cone. It was invented at 99 Portobello High Street by the Acari family in 1922. In my opinion, if anything says Edinburgh it has to be that!

What is your best memory of Edinburgh?
My best memory of the city centre is when I first arrived. It was December and the city looked amazing with everything that goes on during the festive period.

Edinburgh looks especially beautiful at Christmas with all the lights, decorations and markets running along Princes Street, it's just an amazing way to see the city.

As a local; my hidden gem that most visitors to Edinburgh may miss is…
My favourite foodie/wine shop in the city has to be The Bon Vivant's Companion on Thistle Street. Not only is it an amazing wine shop but it also sells everything from bottle openers to wine buckets. So a great stop for a gift or an amazing bottle of wine to accompany a lazy Sunday lunch.
