This December, Forever Edinburgh spotlights Signature Group, one of Scotland’s leading hospitality companies and a familiar name across Edinburgh’s food and drink landscape.

Its portfolio spans standout dining destinations such as Kyloe and Copper Blossom, iconic city stays at The Rutland Hotel & Luxury Apartments and the buzz of Cold Town House in the Grassmarket, where panoramic castle views meet award-winning craft beer. Together, the venues reflect a shared commitment to quality, atmosphere and experiences rooted in the city they call home.

With a reputation for thoughtfully designed venues that resonate with both locals and visitors, Signature Group places the guest experience at the centre of everything it does, from casual drinks to destination dining and city stays. Its continued growth reflects both a deep connection to Edinburgh and a willingness to evolve alongside the city’s changing hospitality scene.


How did your journey with The Signature Group begin?

I’ve been with the company for almost seven years now! What started as a six-month stopgap job at The Fountain Bar quickly grew into something much more. That role evolved into management, then into managing reservations and events at Cold Town House, followed by leading the reservations team across the wider group. Today, I’m Brand & Marketing Manager for Cold Town Beer and Signature Group. I feel incredibly fortunate to have been given so many opportunities along the way. My journey is a real success story that shows what can happen when hard work, passion and dedication are recognised and nurtured. Signature Group has always believed in developing talent from within, and I’m proud to be a product of that culture.

What makes Edinburgh the perfect place for your business to thrive?

Edinburgh’s heritage and history make it a spectacular city for both visitors and locals to explore, and hospitality sits right at the heart of that experience. With 14 venues across the city, we’re proud to offer something for everyone, each with its own distinct personality and brand. Edinburgh has an incredible hospitality scene, and while many of those brilliant bars and restaurants are technically our competition, we genuinely believe we need one another. A thriving hospitality ecosystem benefits everyone, venues, staff, locals and visitors alike, and we’re very lucky to be part of such a supportive and vibrant city.



In what ways has the local community supported your business growth, and how does your business give back in return?

The support from our local communities has been incredible, and giving back is something we take very seriously. We’re fortunate to operate both neighbourhood venues and city-centre destinations. In places like McLarens on the Corner and The Fountain, we work hard to make locals feel truly at home through initiatives such as Eat Out Edinburgh, Kids Eat Free during school holidays, and Milk & Cookies for children after school. We also lean into Edinburgh’s strong sporting culture, hosting pre-match wine dinners and rugby-focused events. Charitable work is a huge part of what we do too – from our annual Reindeer Trail at McLarens in aid of Home-Start UK, to partnerships with local charity House of Hope, and our long-standing work with Doddie Beir and the My Name’5 Doddie Foundation. We’ve pledged a minimum of £11,000 per year to the foundation, and beyond that have donated over £20,000 worth of restaurant vouchers to charities, sports clubs and community groups across the city.


Have you incorporated Edinburgh into the business through your menu, branding or experiences?

Absolutely. Wherever possible, we celebrate Edinburgh’s history and the stories behind our venues. The Auld Hundred, for example, is believed to be the oldest pub on Rose Street, and we love sharing those kinds of details with our guests. Cold Town Beer is poured across all of our venues, and its story is deeply rooted in Edinburgh’s brewing heritage. We’ve recently launched a new range of glassware featuring iconic Scottish landmarks, including several from Edinburgh, and with Cold Town House based in the Grassmarket, the city is truly ingrained in everything we do.

How does your business approach sustainability and accessibility?

Sustainability and accessibility are ongoing priorities for us. We’re constantly reviewing how we operate to reduce waste, improve energy efficiency and make more conscious supplier choices where possible. Many of our venues have taken steps to reduce single-use plastics, minimise food waste and operate more responsibly behind the scenes. Accessibility is just as important. We want everyone to feel welcome and comfortable in our venues, so we continue to look at how we can improve layouts, communication and staff training to ensure a positive experience for all guests. It’s an evolving journey, and one we’re fully committed to.


What’s your favourite part of running a business in Edinburgh, and what makes it special?

For me, it’s how cosmopolitan the city is. We welcome visitors from all over the world, while also having loyal regulars we’re lucky enough to see week in, week out. It really is the best of both worlds, and that mix is what makes hospitality in Edinburgh so special.


What does your ideal 24 hours in Edinburgh look like?

Breakfast at Greenwoods is a must. From there, a wander through the city soaking up the atmosphere, maybe a visit to a local exhibition (Johnnie Walker and the National Gallery are fab) or a walk along the Water of Leith. A late lunch or early dinner somewhere cosy, followed by drinks with friends in one of Edinburgh’s many brilliant bars- ideally finishing with live music or a show during festival season.

What is one local hidden gem you always recommend?

The Port of Leith Distillery. It’s such an impressive space and experience- a brilliant example of modern Scottish distilling done right.


If you could collaborate with any other local business or Edinburgh-based personality, who would it be and what would you create?

We’d love the opportunity to collaborate with Hirundine on a future project with Cold Town Beer. With our strong ties to the rugby community, a collaboration that brings together Scottish brewing and whisky feels like a perfect fit. We’d love to use a Hirundine whisky barrel for our next multi-award-winning barrel-aged stout, creating something truly special that celebrates craftsmanship, heritage and shared values across both brands.


What’s one local event or tradition you never miss and why?

The Fringe, without question. I always make the most of it when it’s here. We’re so lucky to host a festival that people travel from all over the world to experience. The sheer volume of talent in one city is incredible, and it’s easily the highlight of the year.

Looking ahead, how do you see your business evolving within Edinburgh’s hospitality scene?

We’re always looking to grow and evolve. In the not-too-distant future, we hope to open more venues for locals and visitors to enjoy. Alongside that, we’re constantly investing in our existing spaces to ensure they feel fresh, relevant and exciting, while staying true to what makes each venue special.


What would you say to other businesses considering getting involved with Forever Edinburgh?

I’d absolutely encourage it. It’s a brilliant way to connect with like-minded businesses, showcase what you do, and contribute to the wider success of the city. The support, insight and sense of community it offers are invaluable, especially in an industry that thrives on collaboration.
