Hosted by Edinburgh Fermentarium founder, Ruth Munro, find out how to create your own batches of fermented food.

Upcoming classes include:

  • Learn to make Nukazuke – Japanese Fermented Pickles (18 October 2026). Participants will make their own Nukadoko (fermented rice or wheat bran bed) to take home and ferment Nukazuke pickles, as well as making a small jar of Misozuke. At the end of the class, enjoy a small Japanese style meal with lots of ferments and pickles.
  • Kombucha Workshop (24 October 2026). Learn all about the magic of Kombucha – a naturally effervescent fermented drink – with lots of tastings, and how to make Kombucha for yourself at home.
  • Kimchi and Kraut Masterclass (24 October 2026). Participants will make their own Kraut and Kimchi to take home and ferment, with various optional ingredients for a personalised and seasonal twist. There will also be tasters of fermented food and drinks.

All classes take place at Leith Pilates on Queen Charlotte Lane. Please note, the workshop studio is on the second floor, with no lift access.
